Kibou-ken started as a small restaurant in 1991 of about 30 m² in Himeji, Hyogo Prefecture.
We have had lines of over 200 people at this legendary restaurant.
The smiles on our customers’ faces enjoying our ramen have not changed since then.
We always make our ramen from scratch by hand.

Soup Sommelier Shantan-shi
A soup sommelier Shantan-shi crafts the soup at each Kibou-ken store.
The Shantan-shi is Kibou-ken’s own unique qualification given to those who have passed our training and exam.
Only qualified Shantan-shi are in charge of Kibou-ken’s soup bringing out the optimal flavor.

Tonkotsu SoupPork bones soup
We use only 100% Japanese pork bone optimal for our soup which has been carefully selected from dozens of pork production sites.
By simmering it for many hours at the optimal heat using our unique cooking techniques, we extract only the flavor without the odor.
This Tonkotsu soup is only available at Kibou-ken.
White Broth SoupPai tan soup
The main soup used in our original brand name Sesame Miso series.
The soup is crafted with our unique cooking techniques without disturbing the flavor of sesame miso.
This soup with its powerful aftertaste has been served at Kibou-ken since its founding.

Clear Chicken Chintan soup used in Kibou-ken’s Black & Salt Ramen.
The superb blend, careful heat adjustments and cooking time bring out a different flavor and aftertaste for each part.

- Low-hydrolyzed
Medium-thin Curly Noodles - The noodles are hydrolyzed perfectly so that the soup permeates through the noodles’ surface. They are firm and al dente at the core.
- Highly-hydrolyzed
Thick Curly Noodles - Hydrolyzed Medium-thick Noodles The smooth texture goes perfectly with the soup without disturbing the refreshing taste.
- For dipping noodles
Soft Thick Noodles - Made with carefully selected flour that gives off a subtle sweet aroma and taste when eaten. It is mixed carefully so that the aroma does not disturb the soup’s balance.
Its silky texture with goes down smooth is a perfect match with the soup.
